Cake Mix Fix

Many recipes, including some on this site, use cake mix (and sometimes pudding mix) as an ingredient. Unfortunately, companies that make cake mixes have changed the amount of mix in their boxes. That way, they can charge the same. So it's raising prices without raising prices. I don't know about you, but I wish they'd keep the size constant and raise the prices a bit. Sigh.

Anyway, there are ways to fix the old recipes. I've tried a couple.

​

The easiest way is to add flour. The old boxes were 18.25 ounces, and the new boxes are 15.25 ounces. Those 3 ounces equate to 6 tablespoons. So you can just add 6 tablespoons of flour. I tried my Lemon(cello) cake with 6 tablespoons and 5, and preferred the 5 tablespoon addition.

Another method, and one that I think provided even better results with the same recipe, is to mix up some Cake Mix Fix and keep it on hand.

 

As for the pudding mix that is added to some recipes, some flavors are no longer available in the 4 (or 3.9) ounce size. The best option is to keep an extra box of pudding and add some to your recipe to make up the missing portion.

1 1/2 cups all-purpose flour

1 cup sugar

2 teaspoons baking powder

1/4 teaspoon baking soda

Add all ingredients to a mason jar and mix thoroughly.

​

To correct for undersized cake mixes, add 6 tablespoons of this mix to your recipe.

 

For chocolate cakes, add about 4 1/2 tablespoons of the mix and 1 1/2 tablespoons of cocoa powder.
